What to do with leeks

I never know what to do with leeks.

1) A Homity Pie is easy, you need a shortcrust pastry  +  leeks cooked with onions and boiled potatoes  + milk, grated cheese and garlic.  You bake the pastry blind and then you fill it with the leek -potato-cheese mixture. 30mn later, you have your dish ready. It's like a quiche but without eggs and cream.

Not to be confused with hominy, which is a Tex-Mex ingredient made with corn. :)

My variation: no pie, just homity! Yummy.

My ideas: maybe use other leaf vegetables : celery, spinach ...

From the pantry : nutmeg and cheese.
